"I've selected cakes and biscuits for their density and structural properties to be able to assemble Tower Bridge: - bases are made of brownies, towers of sponges & coffee ganache, roofs of shortcrust & coloured white chocolate, turettes of tuile dentelle & meringue and the bridges of nougatine. It has been fun to make and quite a challenge."
