The Baker: Thea Richter
The Bake: Tower Bridge

"My name is Thea, I am 10, and I chose to bake Tower Bridge because I didn't really know the other buildings and I thought it looked the most fun. I decided to make it out of gingerbread, as it is strong and holds its shape."

"First I drew my design onto baking paper, weighed out all of the ingredients and made the dough, chilled it and then rolled it out and cut out all the shapes. I then baked them all."

"The next day I made royal icing and iced on the windows and patterns. I dyed some blue for the blue bits of paintwork."

"Finally I stuck it together with caramel and icing. That bit was very fiddly and my London Bridge kept falling down! So I propped the bits up and waited for the caramel to dry. Amazingly it all stayed in place! My favourite part was doing the icing. I can't wait to be able to visit London again and walk across the real Tower Bridge."
