The Bake: Liberty
"This is my completely vegan cake of Liberty, made up of a mix of vanilla and salted caramel sponge cake, comprising nine 10 inch square cakes. Chocolate ganache was used to sandwich the sponges and cover the cakes. For decoration I used approx 7 kg of fondant, making individual panels and sticking to the cake with more ganache."
