The Bake: Maggie's West London Centre
"I have chosen to bake Rogers Stirk Harbour + Partners’ Maggie Center for its sensitivity and human scale."
"I have separated it into four main parts."
"First, the inside, a lemon yoghurt sponge cake (easy recipe from my childhood) represents the two levels of indoor and outdoor rooms of the Centre.
Secondly, coral-red gingerbread walls are added all around, assembled with royal icing. The brown ingredients (brown sugar & cinnamon) are replaced with whiter ones (caster sugar & lemongrass) to create the bright colour. The vertical lines are cut with a knife and the three big windows are made out of wafer and gelatine."
"The posts (made out of Mikado chocolate biscuits) are cut and inserted in holes enlarged with a Nr.4 knitting needle.
Finally, the simplified roof is made out of rye crackers, assembled with dark chocolate and covered with white chocolate stained in a grey shade with food colouring."
